I tweaked the apple-cinnamon cupcakes a tad, made 2 full batches, and headed to the BMX track today for the party. I was holding my breath all afternoon, but no one puked. No one threw away their cupcake (at least not in my line of vision, heehee). And I even had a few compliments on the cupcakes. :) I was glad I had brought some fresh apples because three of the children opted not to partake of the GAPS goodies. Here’s the final version:
- 6 eggs
- 1/4 c melted butter
- 7/8 c applesauce
- 3/8 c honey
- 1 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1/2 tsp freshly ground nutmeg
- 1/2 tsp ginger powder
- 1/2 tsp allspice
- 1/8 tsp stevia powder
- 1/2 c coconut flour
- 3 large chopped apples, tossed in lemon juice and dusted with cinnamon
I doubled this recipe, but as written above it will make 12 cupcakes. I mixed in the order listed and baked at 350 degrees for about 25 minutes. After cooling, I topped them with meringue frosting. The frosting makes more than enough for one dozen cupcakes, so I decided to make 1.5 batches and I had plenty to frost 2 dozen cupcakes with some leftover.
Now please excuse me as I sleep for 3 days straight. :D
