I spent 9 hours at church today!  I’m beat.  Can’t finish my menu though because I’m not sure when I’ll make it to the grocery store.  We are about out of eggs and totally out of peanut butter so that kind of limits my “quickie” lunch options.  I won’t be able to make bread or waffles until we do get eggs so I’m hoping to get it done mid-week.  We are also out of sweet potatoes or any other kind of potatoes and almost out of white rice.  I’m trying to make sure I get enough carbs and it might be a tricky week without those.  We’ll see if I get a chance to shop.

I need to soak/sprout/cook some beans this week so I can have some ready for soups or taco stuff.  I also need to get more meals frozen.  I should be able to freeze one meal of waffles but that might be it.  I’m so tired right now I want to utilize all the leftovers that I can this week to limit how much time I spend in the kitchen.

Sometime soon I need to get out to our pumpkin farmer and pick up my annual boatload of pumpkin.  I am tempted to just pick it up from them at the farmer’s market so I won’t have to make a separate trip out to their farm, but I can only get what we can carry at the market.  Maybe I need to buy a big wagon!

I bought liver powder this week and managed to chug a shot of it yesterday morning.  Had to work to keep it down.  I decided I’d better not force it today since I was going to be on stage shortly after I would have taken it.  :)  I haven’t figured out how I’m going to take it tomorrow but as a slurry doesn’t seem to work for me.  heehee :)

I’m beginning to think ahead to November.  I’ll be doing a show the 8-9th and I don’t want to cook at all the week prior.  I know it will be an extremely stressful week and I want to ease my load as much as possible.  Every week from now until then I hope to put away extra meals so we can just pull food out of the freezer and reheat.  I’l be making double & triple batches when possible and freezing some of the leftovers we normally would have eaten during the week.  I’ll need to have 7 breakfasts, 7 lunches, and 7 dinners put away at a minimum – and honestly, I may not be able to cook much the week after the show if I get a lot of orders.  Double that number would be a better goal…

So this week I’ll be freezing enough bacon, egg & cheese biscuits for 2 breakfasts and enough white bean soup & cornbread for one supper.  I’ve already got enough beef stew frozen for 1 lunch and enough chili frozen for 2 lunches so at the end of this week, I’ll have 2 breakfasts, 3 lunches, & 1 supper frozen.

  • leftover something – will have to figure this out later

So, so tired.  And really stressed out.  I’m feeling it physically.  I really want to go through intro again soon because I’ve seen some inflammation popping up again but I really don’t have time right now.  Maybe when things calm down in January.  In the meantime, I need to get serious about sticking to GAPS and I need to rest.  So that’s all for tonight!

It has been a crazy past couple of weeks.  I lost my grandma, we made a 1,200 mile round trip, and I’ve been catching up on work since we got back.  I’m not sure if the kids will be with me part of this weekend or not so will have to update the menu as I get more information.
