I’ve got a birthday girl this week! She won’t be home on her actual birthday so we’ll do special meals the day before.
Monday
- pumpkin custard and yogurt; broth
- leftover beef stew
- slow-cooked drums & plums with banana squash
Tuesday
- oven-baked eggs and chicken skin; broth if have time
- poached cod
- chili with grilled cheese sandwiches
Wednesday
- french toast; broth
- drums & plums leftovers
- brown bag – turkey rolls or devilled eggs and apples; muffins
Thursday
- muffins; sausage; broth
- poached cod leftovers
- chili & grilled cheese leftovers
Friday
- b-day breakfast! bacon and eggnog! and maybe eggs too!
- meatza (half-batch) and cucumbers with apple cider vinegar
- ?? daughter is not here to tell me what she wants…I’m thinking buffalo wings (or drums if I can’t find my wings in the freezer, LOL) or pork chops & fauxtatoes with gravy. Probably green beans for a veggie; I think that’s one of her favorites. Maybe buttered carrots, too. And cheesecake sans crust for dessert.
Saturday
- bacon and eggs?
- just me…leftovers, prob.

Sunday
- french toast and sausage leftovers; broth
- leftover meatza
- either buffalo wings or fried chicken w/fauxtatoes & gravy, depending on leftovers or if I feel like cooking the dish my daughter didn’t choose for b-day dinner.
For snacks, we will have apples, yogurt, chicken skin, and maybe muffins. I’m hoping we’ll be full enough with this week’s menu that we won’t need too many snacks. We’ve also been working hard to make sure we are hydrated – we set the timer every hour and drink at least 4 oz each time the timer beeps. Sometimes it’s a ferment, sometimes it’s water. When it’s water, we shoot for 8 oz. That has helped keep us from feeling too hungry in between meals. And it’s amazing how quickly an hour goes by when you are on a drinking schedule like that! heehee
I stopped at ONF after church today and spent way more than I planned. :( The cauliflower for the fauxtatoes alone was almost $6!! And it was small! I decided to stretch it a bit with some much-cheaper white turnips. I bought cream to make hot fudge sauce for gifts (it’s gotten to where I can’t knowingly gift someone with a product containing conventional cream…my conscience pricks too deeply!) and two pints cost me another $8. I spent over $4 on two cucumbers (!!!!!) and $7 on a tub of sun-dried tomatoes for the meatza. Then with the meat, eggs, and other incidentals…let’s just say I spent almost $100. It wasn’t pretty. It *is* a birthday week, and also a gift week for teachers…so it would have been tough anyway. But with my beef order coming in a few days, it will put me in a tighter spot than I had planned on. I think our food expenses will come in around $85 this week, including the splurges like cheesecake and pork chops/bacon. Ouch!
